I was overweight since forever until one day I decided to eat healthier. I lost so much weight and all because of cereal. I love cereals, well I didn’t use to but I fell in love with them. They were a perfect substitute for bread which I avoid to this day. On my one year road to weight loss, I learned a lot about cereals. I learned new tasty recipes that were keeping me healthy and most importantly full. When I had cereal for breakfast I didn’t have the usual craving for unhealthy food and over time my food addiction stopped and I lost weight. Now I eat cereal every day for breakfast and I experiment with different flavors and fruits. My ultimate favorite one is the strawberry coconut cereal. It is easy to make, tasty and nutritious. Fresh, crunchy, light and tasty granola is my morning every day, and I just love it.
Here’s what you’ll need for this amazing cereal recipe:
- 1 1/2 cups gluten-free rolled oats
- 1 3/4 cups (196 g) raw nuts, roughly chopped
- 2 Tbsp (24 g) coconut sugar
- Sea salt
- 3 1/2 Tbsp (52 g) coconut oil
- 1/4 cup maple syrup
- 1/2 cup unsweetened large flake or desiccated coconut
- 2 ounces (34 g) unsweetened strawberries
Start by preheating the oven to 340 degrees and then add the oats, nuts, coconut sugar and the salt in a bowl to create a mixture. Use a small saucepan to add coconut oil and maple syrup. Warm them for 2 – 3 minutes on medium heat, mixing all the time until they become one solid mass. Now, pour over the dry ingredients and stir them to combine until all oats and nuts are coated well. Spread them on a large baking sheet and bake for 20 minutes. After they are done remove them from the oven and add the coconut and stir the granola.
Turn the pan around so the other end goes into the oven first (so it bakes evenly) and bake 5-8 minutes more. Watch carefully as to not burn, especially the coconut. When the granola is golden brown you should remove the pan from the oven. Let everything cool and then add the strawberries. Mix them and combine them. And we are done! You can now enjoy your god given cereal. You will make it again for sure.
