Pumpkin Loaf!


The holiday season is almost here, and it is time for my all-time favorite recipe – pumpkin loaf. I love everything that has pumpkin in it. I love that sweet, smooth and warm taste it gives in your mouth when you try it. Food with pumpkin gives me comfort. There I said it! I find comfort in food, as we all sometimes do.

Winter holidays represent family and comfort to me and naturally I always bake this pumpkin loaf during the cold, rainy days. I recommend this recipe to anyone who wants sweet pumpkin bread as well as to everyone who likes to enjoy autumn in cozy clothes inside with a slice from this sweet pumpkin loaf and a cup of cocoa.

Ingredients:

  • 1/2 cup unsalted butter
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 3/4 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 2 large eggs
  • 1 1/2 cups sugar
  • 1 can solid-pack pumpkin puree

Instructions:

Start preheating the oven to 350°F and buttering the loaf pan. Use a medium bowl to prepare the dough. Start the preparation with whisking together the baking soda, flour, salt and spices into the bowl. After you are done, set it aside. Now, grab the larger bowl and whisk the melted butter with the sugar. It is time to add the eggs, one at a time, mixing well after each. Now, stir in the pumpkin until it becomes smooth. Take the dry ingredients and add them mixing all along gently until it becomes very smooth. Pour everything into the prepared buttered loaf pan, smoothing out the top. Bake for 1 hour and 20 minutes until it becomes brown. If you notice that the top starts to brown really quickly then place a foil on it. Remove it from the oven, let it cool for 20 – 30 minutes, remove from the pan and let cool completely. Slice one piece and enjoy it!
