Healthy Creamy Rice Pudding!


I love how good this recipe tastes. It is absolutely amazing! Rice is always a good idea and when you turn it into a sweet dessert is perfect. I love cooking it for these cold autumn days and consuming it with a cup of warm cocoa. Extremely nutritious and yet low on calories, this recipe is perfect healthy substitute for those heavy sweet chocolate desserts.

Ingredients:

  • 3/4 cup uncooked white rice
  • 2 cups divided milk
  • 1/3 cup white sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2/3 cup golden raisins
  • 1 tablespoon butter
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Get a small sauce pan and put in 1 1/2 cups of water in it to boil. Now, stir rice into boiling water. Reduce the heat to low. Cover and simmer for 20 minutes.
  2. Get a new clean sauce pan and combine 1 1/2 cups cooked rice ,1 1/2 cups milk, sugar and salt. Cook over a medium heat until it becomes thick and creamy, 15 to 20 minutes. Get the remaining ingredients cup milk, beaten egg and raisins and stir them in together.  Cook 2 minutes more, stirring constantly. Remove from the heat and stir in butter and vanilla.
